039 Avoiding Temptation 2/16/18


Listen in while John and Jolene discuss how to deal with the tempations we are all presented with.  They give some helpful tips on ways to overcome the temptation and give some recipes as well.

Ways to help avoid those tempations
-Change your relationship with food.  View food as the fuel it is
-Be prepared

-Crunchy vegetables like bell peppers or cherry/grape tomatoes
-Eat a small piece of 90+% chocolate  melt it down and add a bit of your own sweetener if you need to
-Sweet basil

Recipes
Dark Chocolate Shortbread Cookies
Ingredients (Dark Chocolate Shortbread):
7oz bittersweet dark chocolate (about 70%, I used 4 ounces semisweet and 3 ounces unsweetened)
3 Tbsp butter
1/4 cup cocoa powder
2 eggs
2 tsp vanilla (or substitute espresso)
1/8 tsp baking soda
1/4 tsp cream of tartar
1/8 tsp salt

Almond Ricotta Cheese Cookies
Ingredients
1/2 cup butter
2/3 cup low carb sweetener or 1/3 cup Pyure all-purpose
1 egg
2/3 cup ricotta cheese
2 teaspoons vanilla extract
1 teaspoon almond extract
2 cups almond flour
1 teaspoon baking powder
1/2 teaspoon baking soda
Icing
2 tablespoons almond milk
1/2 cup powdered low carb sweetener or powdered erythritol
1/2 teaspoon almond extract
Instructions
In a mixing bowl, cream together butter, sweetener, eggs, ricotta cheese, and extracts.
In a separate bowl, combine the almond flour, baking powder, and baking soda.
Add the dry flour mix into the creamed mixture until dough forms.
Drop onto Silpat lined baking sheet using a cookie dough scoop.
Bake 15 to 18 minutes at 350 °F until lightly browned. Place cookies on racks to cool.
Store cookies in the refrigerator.
Icing
Stir almond milk, powdered erythritol, and almond extract until smooth.
Brush or drizzle over cookies to frost.
